Why do we confess our sins to a priest instead of directly to God?
The short answer is: because Christ said to to it that way!

When Christ appeared to his Apostles after His resurrection, he commissioned them to share in His ministry:

Jesus said to them again, "Peace be with you. As the Father has sent me, even so I send you." And when he had said this, he breathed on them, and said to them, "Receive the Holy Spirit. If you forgive the sins of any, they are forgiven; if you retain the sins of any, they are retained." John 20:21-23

As you can see, Christ sent the Apostles (predecessors of today's bishops) to do what he did and specifically gave them the authority through Him to forgive sins. While Christ could see the sins in a person's heart, other than St. Padre Pio, our bishops and priests cannot. Therefore in order to forgive your sins, you have to confess them.
